Super easy lunch or dinner veggie casserole. This recipe comes from my friend Lu 🙂
What you’ll need
A bag of mixed veggies of your choice
A red pepper diced uncooked
5 small potatoes cooked
1/2 an onion diced uncooked
2 cloves of garlic uncooked
4 chopped hard boiled eggs
Sausage or ham diced
Mix everything together and enjoy!
