While I’ve been encouraging other people in weight loss, I’ve realized that a lot of people feel like they are struggling alone and that no one understands what they are going through. When really the opposite is true. SO many people understand!

It’s not easy to lose weight, it takes time and it can be discouraging. But there will always be other people who relate to what you are going through and they can help encourage you and pick you back up. The most important thing you can do for yourself is get healthy, take the time to value your own life, start today. Who cares what you ate for breakfast (or even lunch), who cares if it wasn’t the best or a “clean slate”? It doesn’t have to be! You can make healthier choices for the rest of the day and continue. I once heard a quote that was like, “Saying oh I’ve already ruined my diet today, guess I’ll just eat crap, is like saying oh I dropped my phone on the floor, guess I’ll just smash it til it breaks. ”

I personally have lost 3 dress sizes and have 4-5 more to go, it’s not easy, I have hard days all of the time. I mess up all of the time. I have so many of those listed feelings. But I keep going and when I feel down, I tell people! They do this thing, it’s strange really, it’s called “encourage” I didn’t know it existed 😉

The Best Burgers Ever – Use the Spice Rack Burgers

The Best Burgers Ever

We call this the “Use the Spice Rack Steak Burgers” because that is what I thought best described how my husband cooks/ grills haha. He uses everything from our spice rack and just throws it in, it tastes delicious though so I’m not complaining!

Use the Spice Rack Steak burgers 

2lbs ground steak / beef
1 tbsp spicy mustard
1 tbsp bbq sauce
2 tbsp steak sauce
1 tbsp worcestershire sauce
1tbsp ranch
2 tsp hot sauce
1/2 cup breadcrumbs
1 tsp oregano
1/2 tsp salt
1/2 tsp pepper
1/2 tsp chili powder
1/2 tsp rosemary
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp paprika
1/4 tsp cayenne
1/4 tsp curry
1/4 tsp ancho chili

Mix all of the ingredients together in a bowl and shape patties with your hands. Grill until the doneness level you prefer.** Consuming raw or undercooked meats, poultry, seafood, shellfish or eggs may increase your risk of foodborne illness**

The Benefits of Quinoa

There are so many benefits of quinoa! I love it as a rice substitute in Chinese dishes or even on its own with some hot sauce. It’s basically flavorless and has a rice-like texture, it’s also the only grain that is a complete protein and contains calcium, protein and fiber which is great if you are a vegan and need to add extra supplements to your diet.

So go enjoy some Quinoa! 🙂

The Best Ever Vegan Chili

The Best Ever Vegan Chili
2 jars tomato sauce
3/4 cup BBQ Sauce
1 can chili beans
1 can white kidney beans
1 can kidney beans
1 can pinto beans
3 teaspoons hummus
1/8 cup spicy mustard
1 tsp of each of the following spices;
cajun
soul spice
lemon pepper
onion powder
rosemary
chili pepper
garlic
oregano
habenero**
1/4 tsp curry
1/2 tsp cayenne
1/2 tsp ancho chili powder
1/2 tsp sage
1/2 tsp red pepper
1/2 tsp ghost chili powder**
2 cups of almond/soy milk (unsweetened)Mix everything together and cook in a pot until warmed (or place in a crockpot for a few hours). Serve and enjoy!
**Extremely spicy ingredients, use at your own risk!
This chili is sooooo good, my husband came up with the recipe for one of our vegan friends who was coming over on our weekly chili night, we didn’t want to be rude hosts and leave her out so we made this special for her, but everyone else liked it too 🙂

Nutella Brownies

Nutella Brownies are delicious! So I found this recipe floating around pinterest, I’m not sure where the original recipe comes from, but these are good! I had to adjust the original recipe from 10 tablespoons of flour to 8 because it was just too stiff and not batter-like. You can also substitute whole wheat flour for white flour. I have to say though, these should be a “cheat day” sort of treat and not something that’s made every day! While nuts are good for you, eating the whole pan of brownies probably isn’t 😉 Oh and I know you’re probably thinking “if these are brownies, why are they in cupcake pans?” well the easy answer is, I wanted portion control and not sit down with the pan and be like “This is one serving size, right?” 😉

Yaki-Soba & Chicken

1 Package of Yaki-Soba Noodles
1 Chicken Breast Grilled
A few tablespoons of Olive Oil for frying 
4 tbsp Yaki-Soba Sauce 
1/4 tsp ground black pepper

This is a simple lunch that I make for my husband when we are in a hurry. It’s something simple that only takes a few minutes to cook, you can prepare it more beforehand by pre-cooking a week’s worth of chicken and freezing it. That way all you have to do is pull it out, heat it up real quick and voila done. No waiting 25-30 minutes for the chicken to cook, because it’s already done!

The Flat Belly Berry Smoothie

The Flat Belly Berry Smoothie, is super delicious and makes a great breakfast or dessert 🙂
What you’ll need

– 3 ounces vanilla nonfat Greek yogurt
– 1 tablespoon almond butter
– 1/2 cup frozen blueberries
– 1/2 cup frozen pineapple
– 1 cup kale
– 3/4 cup water

Simple directions,

– Place all the ingredients in a blender and mix until smooth and enjoy!
